Eating seasonally in the restaurant biz:
If you work in the restaurant/hospitality business, you know that the ‘Farm-to-Table’ approach to cooking and dining is all the rage.
This fresh, seasonal approach to cooking is a great way for restaurants to embrace the seasons and for chefs to partner with local farmers to bring local produce to their diners. Diners and consumers are becoming more and more aware of what they are eating and the impact their dollar makes. A lot of consumers are eager to support local movements such as locals supporting locals, local makers, farmer’s markets, etc. If you make it clear to your diners that you are supporting the local, hardworking people in the community, you will have a lot of interested customers and diners stopping by to check out your new dishes. Customers love knowing that their dollars are going to support the community and that they are eating produce that is fresh and often tastes better than the imported produce that they are used to eating. This is also an opportunity for you, as chefs or restaurant/bar owners to educate consumers on the nuances of textures and flavors in fresh fruits, vegetables, herbs, and more.
